What is food grade sodium bicarbonate?
Food grade sodium bicarbonate is a mildly alkaline powder used in cooking. It releases carbon dioxide when it meets heat or acid, which is why it lifts batters, and it raises the pH of water, which is why it is used when blanching vegetables. In Korean kitchens it is known as siksoda.
This is the 200 g pack, blended as sodium bicarbonate 99% with wheat flour, produced by Samjin food in Seongju, Korea. A 1 kg pack of the same blend is also made for kitchens that go through more of it.
Read this before you buy
This is not the same as plain baking soda. In North America, baking soda usually means sodium bicarbonate on its own. This product is a blended preparation and contains wheat flour, so it is not suitable for anyone avoiding wheat or gluten, and it is not interchangeable with pure sodium bicarbonate in recipes that depend on exact leavening.
We make three related products, and the difference is entirely in what is blended with the sodium bicarbonate.

How it is used
Blanching and simmering
A small amount added to boiling water makes the water mildly alkaline. Korean cooks use it when simmering tougher greens such as gosari (bracken fern) or dried radish greens.
Washing produce
Dissolve in water, soak the vegetables or fruit, then rinse under running water.
Batters
Added to a batter, it releases carbon dioxide during cooking and the batter rises. Quantities vary by recipe, so follow the recipe you are working from.
Store in a cool, dry place away from direct sunlight, and keep the pack sealed after opening.
Frequently asked questions
Is this the same as baking soda?
The active ingredient is the same, but the blend is not. This product contains wheat flour; our baking soda is blended with sodium acid pyrophosphate instead. They are sold as separate products.
Is it gluten free?
No. It contains wheat flour.
Can I use it for cleaning?
This is a food grade product manufactured and controlled as a food ingredient. Products sold for cleaning and scouring are handled under different standards.
Is a larger pack available?
Yes. The same blend is produced in a 1 kg pack.

Who makes it
Samjin food has processed grains and pulses in Seongju, Gyeongsangbuk-do since 1983. Alongside soybean powders, mixed grain powders and starches, we produce food additives including baking powder and sodium bicarbonate at our own plant. Manufacturing runs under HACCP and FSSC 22000 certified food safety systems, and our plant is registered as a food facility with the US Food and Drug Administration. Registration is a filing requirement for food shipped to the United States and does not constitute FDA approval or endorsement of the product.
